    The cutting fee

Many venues charge $1.50 to $5 per slice to cut and serve a cake they didn't make. On 120 guests that's $180 to $600 — for a cake you already paid for.

    Ask two questions:

    1. Is there a cutting fee, and what is it per person?
    2. Is it waived if we order dessert through you?

Some venues waive it outright, some waive it with any dessert order, some charge regardless. Worth knowing before you commit to an outside baker, because the fee can erase the saving.

    Three ways to spend less

    1. Display cake plus sheet cake. A small decorated cake for cutting and photographs; plain sheet cake served from the kitchen. Guests can't tell. Saves 40–60%.

    2. Fresh flowers instead of sugar flowers. Your florist supplies them for $50 to $150. Sugar flowers on the same cake could add $300 or more.

    3. Order for 80% of your guest count. Twenty to thirty percent of guests don't eat cake, particularly with a dessert course or late-night food.

Also: buttercream over fondant is cheaper, tastes better to most people, and is currently more fashionable.

    Tastings

Most bakers charge $25 to $75, often credited against your order. That's reasonable — a tasting costs them real ingredients and time.

Book tastings 4 to 6 months out. They fill in peak season.

Bring: a colour swatch, two or three images, your guest count, and your venue's cutting fee policy.

    Questions to ask

    • Is delivery and setup included?
    • Do you provide the stand, or am I renting one?
    • How far in advance is the cake made?
    • What happens in hot weather? (Buttercream outdoors in July is a genuine consideration.)
    • Can you match a specific colour? Do you need a swatch?
    • Do you handle allergies and dietary requirements?
    • What's the deposit and final payment schedule?
    • Who's responsible if the cake is damaged in transit?

    When to book

3 to 6 months out. Tastings fill earlier in peak season, so start the conversation sooner for an autumn date.
